This is OP. DC did Bio freshman year and Chem as a sophomore. I guess Physics is needed to check the science rigor box.

My DC took (9-12th) honors Bio, Chem and Physics and is planning to take AP Environmental Science next year (12th). I didn’t realize this isn’t considered most rigorous. Should she be taking the AP version of Bio, Chem or Physics instead of APES? She had to take the honors version first before she could take the AP version of the science APs. Not applying into a STEM major.

Physics but every decision IMHO should not be about rigor unless the goal is a high reach college. The student might want to take environmental science. If the rest of the classes show rigor, it might be fine. My dd23 never took physics and did well with college acceptances but she wasn’t looking at T20 and is majoring in environmental science which was obvious based on her essay.

Yes. That's what my DS has done. He has also now just signed up for AP Physics for 12th.

+1 Even my kid who was planning on an environmental biology major took physics first w/ ES as a science elective in senior year + AP Biology.

So your DC did not take a science during their junior year (psych is not a science)? That seems odd to me. If your DC wants to apply to a more selective university, then they should take Physics. Could they possibly take Environmental Science as one of their electives?
