Pasta with pesto and ramen are always quick!

There are two that are quick and vegan!

1. Cook a package of pasta. Heat up a can of Muir Glen's diced tomato's with Italian herbs (or basil and garlic, both versions are great). Toss cooked pasta with 2 tbsp of olive oil and tomato's.

2. Defrost bag of pre-cooked brown rice (Whole Foods has in frozen section) and Asian veggies. Heat up 2 tbsp of toasted sesame oil in skilled. Stir fry defrosted veggies, adding 2 tbsp of shoyu after a few minutes. Then add 2-3 cups of the rice and 2 tbsp more of the shoyu. Toss together and cook for 2-3 minutes.

Rotisserie chicken from the grocery store, rice and whatever veggies we have on the side

Black beans and rice w/ fried plantain (so yummy)

Trader Joe's pizza w/ salad

Pasta of any kind w/ red sauce (Kirkland -costco- brand crushed tomatoes in a can- 1 yellow onion diced, 1 clove of garlic diced, cook yellow onion and garlic w/ oil until golden brown, add crushed tomatoes and cook for 10-15 minutes- add salt and pepper to taste-- makes the BEST red sauce (can add frozen meatballs if you please)
Tastes even better the next day - tastes even better with grated parmesan cheese (Costco has a good brand)

I always offer a fruit plate (whatever we happen to have) on the side with all diners

We also have breakfast for dinner when DH isn't home. Waffles or pancakes, turkey sausage, and fruit smoothies. My kids LOVE "backwards nights."

Tacos. The americanized ones with "U" shaped shells. They make me feel like a kid again b/c they are so messy!

Crepes. Savory ones - ham & cheese, goat cheese & zucchini, etc. Serve with a side of salad. DS loves dipping anything green into balsamic vinaigrette. Won't eat them otherwise.

Amazing. I would LOVE that meal, but if I served goat cheese & zucchini crepes with a side of spring greens in balsamic vinaigrette, I would have 3 little people fixing themselves bowls of cereal pretty quick!
