Wasting turkey gizzards is a mortal sin

Manufacturers that don't include them are probably using them for their own purposes -- making their own stock or selling them to a soup company.

Gag. Of course I toss them. This is sort of why I hate going to a Thanksgiving elsewhere. I never know where organ meat might be lurking.

We use the neck, heart and gizzard to make gravy, and feed the liver to the dogs.

I put the neck in the bottom of the roaster under the turkey and it comes out delicious. It’s one of my favorite bits.

I eat the gizzards only and throw the rest of the bird away, is that OK?

I LOVE the taste but only get it at Thanksgiving. My mom boils it, keeps the stock and I split it with the dog. I love the liver flavor but maybe because I never cook or am served liver anywhere. It kind of reminds me of a dense tinned oyster in texture and flavor.

I love the gizzard, heart and neck. None goes to waste.
