Drinks - Sprite with lychee extract
Corn soup made with fresh corn cobs Sweet potato slices - I will roast them on cast iron griddle Green beans, turnips, small potatoes, broccoli baked and seasoned with olive oil, garlic salt and herbs. Will be served with guacamole dip. Pasta casserole with veggies and cream of mushroom. I plan to make cream of mushroom the previous night and refrigerate. Fried rice (garlic, green onions, carrots) Mashed potatoes with gravy (not sure yet but will make if time permits) No turkey. All plant-based menu to celebrate November, the month of kindness. |

Thanks for suggestions. Neither DH nor 1 DC eat green beans and both always want a salad on table for dinner, so am going to stick with this one that they love. Think that I may stick with the soup and go with a three course dinner - trying to make it special in light of circumstances. |
