The WaPo reports that in the Ellis video recording is about 30 min, whereas the others are 2-3 hours long. Prosecutors stop Ellis several times while she speaks, to stop her from violating attorney-client privileges.

Who is the client? And if they've done something criminal, why can't she testify about them? Is it Trump, and are the prosecutors keeping his actions safely under wraps, so that it doesn't get leaked?

If Trump does what Trump does, with his usual crap like "I didn't know the guy, maybe he brought coffee to a meeting one time" then is there still attorney-client privilege? Basically, if Trump makes a public statement that Ellis was not representing him then does attorney-client privilege still exist?

Why would it taint the jury pool? This is testimony and evidence that would get shown to a jury regardless.
