I’m a charcuterie person too. DH thinks that doesn’t count as dinner, otherwise I’d have it several nights a week. I get really nice cheese, meat, jams and crackers and olives, but don’t bother with any fancy plating if I’m alone.

kasha with mushrooms or fish since my wife doesn't like how those things smell. Roast chicken/pollo a la brasa that I can eat messily without anyone watching. Sushi so I can eat a lot of it without judgment!

Pp: Yes! There is a Moosewood cookbook recipe for Hungarian Mushroom Soup that is amazing. The pasta is just make some pasta, sauté mushrooms and garlic in evoo or butter and toss with the pasta w/ salt, pepper and parm.
