Have you looked at them? Lots of carbs and sugar. Feed real food and one a day max.

I agree with looking at alternative drinks. The doctor is giving you a pre-set instruction, with no care about whether your kid finds it tolerable.

Another former ED mom here. We did a variation on the recipe above using frozen fruit and whole milk vanilla yogurt instead of ice cream. My daughter found it was smoother and easier to drink through a straw (drinking through a straw can help deal with taste issues because you bypass a lot of the tongue). And she definitely preferred the vanilla boost plus over the ensure, she said it was less chalky.
