I go to Seoul regularly to visit DH’s family and I can’t say it would be my first choice for a restful solo trip. Jeju Island maybe, though I wouldn’t go without a Korean speaker (unless things are significantly different than when I last visited in 2012)

This. It’s easy to travel around the country with the great train system, I found English to be more of a problem than Europe but everyone was willing to use google translate to communicate, so we managed.

Almost any city in Europe, Prague, Amsterdam, Rome, Vienna, Barcelona, Madrid, … would provide what you are looking for.
