It calls for a bottle of oil to fry the onions and potatoes It is really good. Then the house smells like grease for the rest of the day and I don't like it. I only makes it 2-3 times a year.

Fried rice with eggs, peas, corns.

Secret is to stir fry the eggs separately, with your favorite chili sauce beat into the eggs. Then stir fry the vegetables, add cooked rice, add eggs back. Otherwise the whole dish is soggy because the eggs coat the rice/veges.

I’ve been making my version of chiliquiles almost every morning. Mix crushed tortilla chips with salsa. Scramble egg. Add chip mixture, top with cheese. If I have any veg (beans, corn, spinach, peppers and onions) I’ll sautee that before scrambling the eggs. It’s so good!

This time of year, I make zucchini mint feta scrambled eggs. Of course, I use Just Egg, not real eggs. But it’s the same.

Kookoo (or kuku), a persian dish, is a frittata of herbs and eggs. It's a little labor intensive, but once made, lasts for several days, packs well, and is pretty versatile (put a slice in a sandwich with condiments, crumble up with rice, eat hot or cold, etc)

You can make tortilla with less oil. I don’t deep fry the potatoes, just a little oil in the pan.
