Hardboiled eggs, macaroons, baby carrots/dip, matzah lasagna is ok cold (just like regular except instead of noodles, use pieces of matzah dipped in water), pudding, rolls of deli meat, string cheese

We basically just nix the “carb” component to meals, as none of us are huge matzah fans. At dinner we usually do a protein like salmon, roast veggies and sometimes roast potatoes. But you asked about packed camp lunches - I’d make salads adding cheese or chicken or nuts for the protein; roll up deli meats with yogurt and veggies; egg or tuna salad in a container with a fork (instead of sandwich); cold chicken legs; soup in a thermos (except it is 80 deg this week 😊).
