Peloton classes + milestones, OTF classes + splat points, runtracker apps with a summary of pace and distance. I don't do it, but I don't hate it either. I'm either vaguely proud of them for sticking to it, or reminded that I need to get off my @ss and get a ride in.
Filming yourself in the gym is worse, to me, because I can't help but think of how disruptive it is to everyone else at the gym to have this person taking up the squat rack + the floorspace between the squat rack and their phone (can't walk in the shot!) + the buffer zone I'd give them so that I'm not accidentally in the shot and posted online. Feels aggressively self-absorbed in a way that "so glad I got up for the 5:30 today! Start your day right!!" posts do not.
Yes, I'm old and don't know much about Instagram, but don't Instagram stories go away after one or two days? If so, that doesn't seem like a good way to track workouts.
