We usually get a roast chicken one night and serve with green beans and garlic bread but I make Mexican chicken soup with the leftovers. Last night I did it with corn and kale and Chile, top with tortilla chips avocado and shredded cheese cilantro etc.
Based on recommendations here we are trying egg roll in a bowl tonight. We also do tacos/rice bowls; chicken curry (jarred sauce sometimes) pasta with broccoli chick peas and red pepper or with chicken sausage Spinach and feta in tomato sauce. |

I try to plan by rotating these categories:
Mexican (fajitas, tacos, carnitas), Italian (spaghetti, lasagna, alfredo), hearty soup in winter, grill in summer American (meatloaf, beef roast, mac and cheese), Asian (curry, stir fry or fried rice), Meal type salad (often with leftovers) Usually meals planned this way are less boring/repetitive. |
