We always having seafood on Christmas Eve and normally it's scallops but this year we're making pasta and a homemade alfredo sauce and having some shrimp with it. Feels special because we wouldn't normally indulge in alfredo. Easy to cook for just two.

I grew up with stuffed Cornish hens for Christmas Eve but DH revolted a few years back and told me he doesn’t like them. Now we do seafood and I’m secretly glad we switched. Here’s our meal this year:

Crab cakes
Panko breaded shrimp
Beecher’s Mac and cheese
Simple steamed, buttered green beans
Rosemary sourdough slathered with Wegmans Butter Boy
Christmas cookies for dessert

Fondue and raclette have become our tradition for Christmas Eve. It’s great because it’s more interactive and takes a bit longer & makes the actual meal more of an event.

Would you mind sharing the crab cake & shrimp recipes you use? I believe I saw the Beechers Mac & Cheese recipe in another thread. I do like a Cornish Game Hen, but this menu sounds very appealing too.

I’m the PP-So my “recipes” for the items you mentioned are as follows :

Crab cakes-prepared section at Wegmans
Shrimp-frozen section at Costco
Beecher’s Mac and Cheese-frozen section at Wegmans

I used to be a diehard scratch cooker, but I justify the short cuts to myself by the fact that they’re delicious indulgences made well by their purveyors. Plus I’ve got 3 under 7, and my DH will be working.
