| Monti. Pumpkin dumplings from Central asia or Hamum same dough but rolled out. Also known as "roulet" I chop or grate the squash, season with onions, garlic cumin, salt pepper oil make the dough outta flour, oil, water and egg and steam it. It really does not take long after you've done it for a while. |
| Roast and use in a risotto, soup or sauce. We LOVE butternut squash and always have it on hand in some form (fresh, frozen, some sort of food item, etc). |

I love the smitten kitchen winter squash pancakes with crispy sage.
I also love it in a quesadilla with smashed black beans and maybe some corn. Okay r roasted in a grain bowl with farro and arugula and maybe a grating of Parmesan or other sharp cheese. I cook the farro with better than bullion and you really don’t need a dressing even. |

I also love soup, with Thai red curry paste and coconut milk, topped with fried shallots and cilantro. |
