Here’s a recipe for white beans and rice from my Cajun MIL. She’s got more involved recipes. This is her easy weeknight version.

Salt pork
Yellow onion
2cans white beans
1/2 cup chicken broth
Green onions
Rice

1. Spray a pot, put about 1 Tablespoon of oil and cook your salt pork. Depending on the size you may only want to use half.

2. After it has cooked for awhile add 1 large onion, chopped and 2 cloves of garlic. Saute until veggies are clear.

3. Add the 2 cans of white beans and about 1/2 cup of chicken broth. If the beans are still too thick add a little more chicken broth. Add salt and black pepper to taste.

4. Simmer over low heat for about 30 mins. Stir your pot often or the beans will stick to the bottom.

5. Add chopped green onions and cook for an additional 10 mins. Serve over rice.
