Mashed potatoes freeze well so I would make a big batch, portion them out, freeze and have for a quick side dish. Same with twice-baked (and probably most other potato recipes, honestly).

If they really start to look bad (like you cannot eat them), then cut into sections, bury them in dirt, and harvest in a summer.

Same. Or make a huge pot of soup with them and bring to a food pantry.

You can freeze a lot of potato recipes. Twice baked potatoes are very quick/easy and freeze so well. Bake a bunch, half them once cool, scoop the insides, season, pipe back in. Freeze.

You could throw them into a curry, chicken pot pie (or soup version), etc.
