Also, some sort of caprese-like salad. Tomatoes, fresh basil, some other greens, take or leave the mozz, and you could just toss it with olive oil, or make an olive oil/garlic vinaigrette.

OP, we just had a delicious chef salad for dinner. Toss a bunch of mixed greens and some leftover steamed veggies -- we had broccoli and cauliflower -- with a few other veggies from the crisper; then I added some leftover brolied salmon -- and a vinagrette salad dressing.

Stuffed portabella or crimini mushrooms.

Remove the mushroom stems. Saute, grill, or roast the mushrooms. In pan, saute garlic, onions, spinach, and tomatoes (add them in that order) in olive oil. Stir in mozzarella cheese. Immediately spoon the filling into the mushrooms. Alternatively, you can spoon just the veggie filling into the mushrooms and then sprinkle with mozzarella.
