Deceptively simple salads

Romaine or another crisp lettuce, tomatoes, cucumber, red onion, feta, chickpeas, and some kind of herb vinaigrette. I pack a container of lettuce, and another container with everything else marinating in the dressing. Combine at lunchtime. If I have hard boiled eggs, I'll chop one of those on top too.

Shredded cabbage, sliced apples, celery, dried cranberries, chopped or shredded chicken, walnuts, olive oil & cider vinegar.

Toasted pita bread, stuff with assorted lettuce and shredded cheddar cheese, dress with a tangy vinaigrette!

I make something very similar (mine has some soy sauce and garlic) and I massage the kale before serving to soften it up.

Totally different direction but perfect for this time of year: Sicilian orange salad. The basic concept is to slice nice, juicy oranges, sprinkle with a little coarse salt, and drizzle with olive oil. The oranges' own juice + salt + oil create a magical vinaigrette with no vinegar. Garnish with very thinly sliced red onions and add some olives if you want.

Google around for variations, but steer clear of the ones that want you to add vinegar, which really defeats the whole magic of the thing.

Another combo that’s easy and unusual is romaine with toasted walnuts and blueberries. I add apple cider vinaigrette but any light dressing would work.

We always seem to have blueberries in the fridge.

My favorite is shredded kale, avocado, pine nuts, and a lemon juice/EVOO mix for dressing. Top with salt and pepper. So good!

Arugula, parsley, capers and lemons, salt and oil. I don’t care for Dijon in every salad.
