Two cups coating the bottom of a large serving platter would make for some mighty shallow swimming. I think it's there to provide moisture underneath, but I don't think the wings can do backflips.

She has more than I do. We carve in the kitchen. Our oven is busy with other things - keeping the bird warm wouldn't work. Although I do know someone who carves it and puts it in the slow cooker on the keep warm setting. |
