If you have a large age gap, do you keep items for younger siblings?

We've gotten fantastic use out of plenty of it (my two are same gender). But again, space was not an issue.

Space constraints or not, keep books 100000000000%.

I'm the quoted PP and should add -- after my second DD outgrew things, we donated, and plenty was still in fine condition even then.

Really depends on how much storage space you have.

My 2 daughters are 10 years apart.
Holiday dresses and winter coats - yes
Everyday clothing - generally no (styles change too much, elastic ages)
Books - no, we are fortunate to live near a great library and go regularly. If we didn't, I would say keep the books, but be aware the kids may have different tastes and it may be a waste of effort to store them. Depends on your space.
Toys - generally no except for a few special items.
