OP here. Older kids--teens. Don't eat the blue cheese coleslaw but my husband likes it.
Here are some of the recipes: 1. Barefoot Contessa's turkey meatloaf: http://www.foodnetwork.com/recipes/ina-garten/turkey-meatloaf-recipe/index.html 3. KathEatsRealFood's veggie lasagna, made with cottage cheese: http://www.katheats.com/favorite-foods/the-best-vegetable-lasagna/ 7. Pioneer Woman's mulligatawny http://thepioneerwoman.com/cooking/2010/12/easy-mulligatawny/ 9. Allrecipe's beef stroganoff http://allrecipes.com/Recipe/Easy-Beef-Stroganoff/Detail.aspx 10. Allrecipe's crustless spinach quiche http://allrecipes.com//Recipe/crustless-spinach-quiche/Detail.aspx But seriously, am in a rut and can't think of other dishes besides these that we eat all the time. Suggestions?! |
| We subscribe to "The Scramble" and there's hardly a recipe on there that my kids don't love. All of the chicken and vegetarian recipes have been huge hits, the Mexican ones are delish, and even the "fancier" receipes for pork tenderloin and some complex pureed soups have gone down easily. They even suggest side dishes, which we take or leave depending on everyone's taste. Seriously worth the small subscription price and it's an amazing way to change up what you make every single week. Take a look -- www.thescramble.com |
| How about a fish dish? Salmon burgers are quick. Myself and my dh have them in a salad and the kids have them with homemade fries. I make a quick mayo based sauce for the burgers too. It is a Rachel Ray recipe and it is v. easy. |

A simple roast organic chicken (love Thomas Keller's technique - http://www.epicurious.com/recipes/food/views/My-Favorite-Simple-Roast-Chicken-231348 ) with roasted root vegetables or mashed potatoes, green salad
A "burrito buffet" - put out cooked chicken (either from a store roasted one or grill boneless breasts), beans (black or refried), various chopped raw vegies (lettuce, tomatoes, avocado), sauteed or grilled onions and red pepper, salsa, grated cheese, sour cream - and let everyone make their own burritos; I often serve it with a fruit salad Pork tenderloin - 2 favorite recipes - http://www.epicurious.com/recipes/food/views/Pork-Tenderloin-with-Balsamic-Cranberry-Sauce-100314 and http://www.epicurious.com/recipes/food/views/Pork-Medallions-with-Chili-Maple-Sauce-237902 Salmon fillet grilled or broiled with teriyaki marinade, brown rice, steamed or parboiled sugar snap peas Baked fish veracruz (white fish fillets topped with a quick sauce made with canned tomatoes, garlic, onions, olives, spices), small roasted potatoes, green vegie or salad Greek-spiced shrimp http://www.epicurious.com/recipes/food/views/Greek-Spiced-Baked-Shrimp-350590 Tortellini or ravioli soup - chicken broth, chopped vegies (carrots, celery, onion, mushrooms, peas, etc...), can add turkey Italian sausage for more flavor, add the store bought tortellinis or ravioli at the end and serve when they're cooked Burgers (beef and/or turkey) with broccoli slaw (I add dried cranberries & cashews to the dressing) and fruit salad |
| Did you just come on here to brag, OP? Go away. |
?? I'm not OP but I don't get this post. I think this thread is really helpful. I'm always looking for ideas of reasonably healthy dinners my family will eat, and if someone else's kids will eat it there's a higher liklihood mine will too. Why so hostile? |

I don't know that I post twelve healthyish meals!
But I can try -- I'll have to include some cheats -- processed/freezer foods that don't have a lot of additives and such. (We follow the Feingold Program and also my husband is ona pretty strict weight loss/low additive diet for health reasons) 1) My kids like this frozen noodle and vegetable dish we get from Costco. I add either cooked shrimp (adults) or tofu cubes (kids) to make it a meal. 2) Everyone likes salmon with some stir fried broccoli. 3) vegetable lasagna -- I buy it frozen though from Trader Joes. 4) homemade chicken noodle soup 5) homemade pizza (traditional and carmelized onion with balsamic vinegar) and salad um... OK, well at least that's 5!! |

Red beans and rice. We make ours vegetarian but sometimes include veggie "sausage" or "meatballs." Sometimes we sub quinoa for rice - both quicker and more nutritious.
Fish sticks with green salad. The TJs fish sticks are actually pretty healthy. Roasted broccoli (with lots of garlic, breadcrumbs, and cheddar) or roasted brussels sprouts (with lots of balsamic vinegar), with a side of scrambled eggs. |
| Turkey tacos. Can find a bunch of recipes on-line for low-sodium (and tasty) spice mixes if you don't want to buy the pre-packaged mixes. Add brown rice and beans and you've got a good, healthy meal! |
| Ooooh can you post the recipe for the homemade pizza??? |
| Are all of the posters working outside the home? How do you have time to cook such great meals? |
