I'm going to a party that is a Mexican potluck. Any suggestions that are easy to make and travel well?

This appetizer is sort of Mexican, and it is easy to make. You can freeze them and let them thaw 2 hours before serving, so you don't have to worry about using a cooler for transporting. You might also want to up the spices a bit.

Took those pinwheels to a cocktail party - very popular. Enchiladas can also be done ahead and travel easily.
