| I bought mango and chicken sausage at Trader Joe's to try, but have no idea how to serve it. I was thinking over pasta or rice with some sort of sauce but I'm not sure what. Would love suggestions for something quick and easy I could make. Thank you! |
| Interesting! I might try a mojo sauce. Steven Reichlin has a recipe for a mojo sauce that we use to marinade pork tenderloin, but you could spoon it over the sausage and rice. | Tough one! Maybe saute some chopped onions and red peppers for a few minutes, add a can of diced tomatoes, and then add in the sausage (assuming it is already cooked) to heat it through, and then serve over rice? If there isn't enough liquid you can always add in some chicken broth. |
| FWIW, we grill them and serve them with rice and a veg. but don't bother with a sauce. |
| I could see doing a quick sweet and sour sauce with some pineapple preserves, some hot pepper, some dijon mustard and some soy sauce. |

| OP here. Thanks for all the great ideas! You inspired me to get creative and I made a sauce of mango-ginger chutney, dijon mustard, mirin, and chicken broth and served it with pasta. It was pretty good for something I made up! DH thought it was fine but I noticed he didn't take the leftovers to work for lunch . . . |
