If the date on the egg carton says...

Jan 21, can I still use them safely tomorrow for scrambled eggs? It's a snow day and I want to make a big breakfast.

Oh yea...I heard on Martha Stewart or the Today show once that as long as your keep your eggs refrigerated you can keep them a month after the date and they are fine.

I've followed the float rule - put the eggs in a bowl of water - if they float to the top - that means they've gone bad and don't use them. If they sink - they are ok to use and eat.
