What is fat free half-and-half, and what do I do with it?

Anonymous
Husband bought fat-free half-and-half at the store in advance of some family visiting this weekend, who like half-and-half in their coffee, I bought some regular half-and-half because I know the fat-free stuff would be shunned, and I like milk in my coffee, so is there anything I can do with the fat-free stuff now? Cook with it? What would it count as -- cream, half-and-half, lowfat milk?? Or just throw it out?

The only time I used it was to make "Suprise South Beach Mashed Potatoes" which are not potatoes but mashed califlower.

4 cups cauliflower
1 oz. butter spray
1 oz. ff half and half
salt and pepper
Steam or microwave the cauliflower until soft. Puree in food processor adding the butter spray and the half and half to taste. Season with salt and pepper.

It's the only time I've used it but I had never heard of it either. This dish isn't bad especially if you are trying to lose weight.

You can make alfredo with half, and half. You can mix it in mashed potatoes like pp said, you can add it to scrambled eggs, you can use it in baking too.
