Open jar of mayo in the refrig - is it still good?

Anonymous
We opened up a jar of mayo over the Thanksgiving holidays for our guests that were staying with us. They are visiting us again this weekend and was wondering if I can still use that same jar. It's been in the refrig. the whole time and hasn't been touched since (our family doesn't care for it).

It smells and looks normal, but wasn't sure if it was "hardy" like mustard.

It is fine.

should be fine as long as it hadn't been sitting out for hours and hours when your guest were there the first time.

Yep, as long as it's been refrigerated, and it was store-bought (i.e. pasteurized) mayo, it's fine. I sometimes take 4-5 months to finish a jar.

It should have an expiration date on it. I am careful with mayo because of the eggs.

Store-bought mayo is so processed, it's basically not like homemade at all! Because of the processing (including pasteurization) I don't think I've ever had store-bought mayo go bad!

Taste a small dab of it - you'll know. If in doubt, I'd toss.
