What is the best dish you make for a brunch? Or what is a quintessential brunch dish?

I second the quiche idea. It is so easy to make, especially if you use the premade pie crusts, and it's versatile depending on what kind you feel like making.

Yes, in fact, most recipes require that you make it the night before and put into the oven in the AM.

I make one savory one (gruyere with spinach) and one sweet one (maple syrup and cinnamon). With a pot of coffee, side of bacon, and fruit salad, you are good to go.

Bagels, cream cheese, lox, capers, sliced tomatoes and onions, OJ, coffee, a huge fruit salad, and (if there are certain aficionados in attendance) whitefish.

this is our approach too, but sometimes we'll add an egg dish, like strata or baked french toast.

Strata, for sure! Because you make it the night before. I've also done a spinach and gruyere version that is amazing - recipe was from Cooks Illustrated. I serve with a cheese grits souffle (I'm southern but you may think grits are weird). Add coffee, OJ/mimosas and some kind of bread or pastry and you're good to go.
