| What is the best dish you make for a brunch? Or what is a quintessential brunch dish? |

Had a New Years day brunch and made these eggs. They were easy and very well received.

| I second the quiche idea. It is so easy to make, especially if you use the premade pie crusts, and it's versatile depending on what kind you feel like making. |

Yes, in fact, most recipes require that you make it the night before and put into the oven in the AM. I make one savory one (gruyere with spinach) and one sweet one (maple syrup and cinnamon). With a pot of coffee, side of bacon, and fruit salad, you are good to go. |

this is our approach too, but sometimes we'll add an egg dish, like strata or baked french toast. |
| Strata, for sure! Because you make it the night before. I've also done a spinach and gruyere version that is amazing - recipe was from Cooks Illustrated. I serve with a cheese grits souffle (I'm southern but you may think grits are weird). Add coffee, OJ/mimosas and some kind of bread or pastry and you're good to go. |
