| Anyone have good recipes for meatballs that freeze well? Thanks. |
| I don't have the recipe with me, but I remember the secret (in my cookbook) was to make the meatballs and freeze before cooking. Then either defrost or cook longer in sauce (I think it was 40 minutes in sauce if frozen). |
| I think meatballs do well in the freezer. I sometimes freeze mine in a quick tomato sauce, which keeps them moister. I always cook them beforehand. Basic recipe is to mix 1/2 cup milk with 1/4 cup bread crumbs and let it sit for 5 minutes. Mix in 1.5 lbs. meatloaf meat (veal, pork, beef - your choice of combinations), 1 grated onion, several tbs. of chopped fresh parsley, 1/2 tsp. dried hot pepper, and 1+ tsp salt (to taste). I bake at 425 degrees on foil-lined pans for about 18-20 minutes. |
