Help! I thawed out frozen leftover turkey and don't know what to make!

I thought I would come up with some inspiration but nothing is sounding that great to me. Do you have a simple, tasty dish that you make with leftover turkey? Please share. Thanks.

Enchiladas, just shred the meat, mix with some shredded cheese, green chilies, onions, sour cream, whatever you like, wrap in corn tortillas, douse with enchilada sauce, top with cheese, and bake. Traditionally the tortillas are dipped in oil and/or sauce before rolling, but I skip this since it's messy and adds calories and fat. And sometimes I just layer it all instead of rolling the enchiladas because it's faster.

I like Trader Joe's enchilada sauce for red, Hatch for green.

Chop up the turkey, sautee some leeks and anything else that's hanging out in the veg drawer, add a little parmesean and put it all in a frozen pieshell. Fill the shell with egg mixture and voila, tasty quiche.

I wanted to try this over Thanksgiving and never got around to it. Can't vouch for it but it sounds good.

Hot turkey salad
Ingredients
• 2 cups cubed cooked turkey
• 2 cups chopped celery
• 2 teaspoons grated onion
• 1/2 cup pecans, chopped
• 1/2 teaspoon salt
• 1 cup mayonnaise
• 2 tablespoons fresh lemon juice
• 1/2 cup Cheddar cheese, grated
• 1 cup potato chips, crushed
Directions
1. Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13 inch baking dish.
2. Mix the turkey, celery, onion, pecans, and salt together in a mixing bowl. Stir in the mayonnaise and lemon juice until evenly blended. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese, then potato chips.
3. Bake in preheated oven until cheese melts, 10 to 12 minutes.

My vote is for turkey pot pie (especially if you happen to have a pie shell in your freezer.)

Turkey and brown rice perloo! Sort of a casserole but no gross cans of soup or anything in it. I made it recently and it was very good!

Turkey Tetrazzinin is the BEST dish for left over turkey. Google it.

Turkey posole.

Chili and tomato broth soup with hominy, cabbage, and lime. So good. I don't really have a recipe, just google it. If you find a pork posole recipe, that's okay, just make the broth and add the shredded cooked turkey meat at the end.

I make turkey pot pie

I use a pie shell from the store, I mix 1 can of cream of celery soup, 1 can of cream of potato soup, cut up leftover turkey, a bag of frozen veggies, and than just a little milk. I did this with some of mine, and it came out SOOOO good... My husband and daughter LOVED it!

You can also take a jar of alfredo sauce, and make turkey alfredo.

If you have some broth, or buillion and veggies, you can make a nice turkey soup.. very good on cold days

PP here, I forgot to add, I also made a good chili with mine also. YUM.. You have inspired me, tomorrow I am going to take the rest of my leftover turkey (FROM THANKSGIVING!!) out of the freezer tomorrow... prob. make a turkey pot pie.. (I don't know if you saw it, but in the food forum I posted something similar for recipes for leftover turkey, because I accidentally got a 15 pound turkey for the three of us.. We are STILL occassionally eating some of that turkey.)
