Why can't I just put the lid back on the pot and put it in the refrigerator?
Other than it might not make a complete seal to keep out all the air, why can't you?

Definitely not a good idea to store foods in aluminum pots and pans because of leeching and health issues. Even with stainless steel, although not so much a health issue, you can ruin your cookware. According to Clemson University Food Safety, "Manufacturers caution against allowing acidic or salty foods to remain in stainless steel for long periods. Although there are no known health hazards from leaching of the metal, undissolved salt will pit steel surfaces." I think glass and ceramic are the safest storage containers.

We don't store our leftovers in the pots/pans b/c we need to wash them to use them for the next night or so. Get some nice tupperware containers to store your food in.

I would think there is a possible health issue because it was take so long for the pot to cool down (it would stay in that neutral not hot, not cold phase where bacteria grows). I'm a bit of a food illness freak, so I take things out of the pots, let cool on the counter (but not for too long) and then put in the fridge. You may not be as nuerotic.
But the inconvenience factor would also be a big one for me. The longer things stay in a pot or pan, the harder it is to clean. |
Because it's gross, inefficient and takes up too much space. Dont be lazy. Store in tupperwear (preferably glass ones).
