| I am baking sugar cookies and the recipe says to lightly grease the baking pans. What do I do for the second batch? Do I wait for the pans to cool down, then lightly grease them again? Use them right away? What? TIA!! |
| I never grease the pans. I just use parchment paper. You can put the next batch on a couple of pieces of parchment paper while the first batch is baking and then carefully slide them onto the pan. (Use a couple of smaller instead of one large piece per pan to make this easier.) |

| Unfortunately I can't find the roll of parchment paper that has been falling down the basement steps for the last year so I have to grease the pans. |

I bet they'd be fine without greasing the pans, maybe try a test cookie first.
Just throw the pans outside for a rew minutes and they'll cool off. If they're hot the dough will spread too much anyway. |
