I need a pasta salad to serve a child who is vegetarian. She does not like raw tomato. Thanks.
I don't have a recipe per se, but this is what I usually do when I know kids are eating the pasta salad: use a fun shaped pasta, like farfalle or gemelli, and toss with small broccoli florets (barely cooked - just toss in with pasta for last minute of cooking), chopped colored peppers (raw), defrosted frozen corn kernels, cubed mozzarella cheese, and toss with a small amount if vinaigrette dressing. I find the kids tend to like less dressing and crunchy colorful veggies, plus of course cheese.
I like to make a pasta salad with cheese tortellini. Add cheese cubes, broccoli, and toss with a vinaigrette.
Colored pasta cooked, bag of steamed frozen veggies (corn, peas, green beans, and carrots), tossed with creamy italian dressing (if you want to avoid the eggs then simply mix italian dressing with some mayo.
