| I made my first pot roast and accidentally (well, maybe not accidentally, but definitely without knowing better) made a 4 lb roast for two people. What the heck do I do with all of the leftovers besides some sandwiches tomorrow? Can I freeze the meat and put it in other recipes later? |
| I make a 3 or 4 lb roast and eat pot roast for one meal. I take some of the meat and put it in a sauce pan with some broth and some steak sauce or a little soy sauce and warm it through until it is fall apart tender. I shred it and make sandwiches with it. And then left over pot roast and salad or a fresh veggie for the last leftover meal. |
| you can freeze it. We do shredded pot roast over mashed potatoes (or rice) with beef gravy. add bbq sauce and do on buns. make in a casserole. pan fry and do with eggs for breakfast. quesedilla with cheese. |
| slice it thinly then put in 3-4 oz in a ziplock sandwich bag and freeze. Then you have the portion for a roast beef sandwich. I usually toast 2 slices of bread and take my frozen baggie of meat. By lunch I put it together for a nice roast beef sandwich. I call it a roast beef sandwich kit. Bread does not get mushy. |
| My mom used to make a kind of shepherd's or pot pie with pot roast leftovers. She cubed the meat and veggies and put in a baking dish along with some of the juices from the slow cooker the pot roast had been cooked in, then put biscuits on top and baked until the biscuits were cooked. I was never a big pot roast fan, but loved the leftovers! |
| I use it in thermoses for the kids' lunches the next day. I pack some in a thermos (heated up), and give them that with a piece of bread, some fruit, and voila! lunch. |
| I often add leftover beef , chicken, or veggies to canned soup. |
| We make french dip sandwiches, save the broth from the pot and use it to dip the sandwich in. Yummy. |
