I have some vegetarians coming over for Christmas. I'll have a honey baked ham but would like another hearty dish that's meat-free, like a lasagna....any suggestions?
If they are OK with cream/dairy maybe a pasta with peas in a cream sauce or a risotto with butternut squash or peas. Green beans with almonds instead of bacon for crunch is always good.

Cooks illustrated has a great mushroom and spinach lasagna that I've made several times--let me know if you'd like the recipe and I can post it when I'm not breastfeeding and surfing DCUM on my phone.

I second the scalloped potatoes. YUM!
Grits souffle. Really delicious, kind of like a lighter version of cheese grits.
We always have baked macaroni and cheese with our xmas ham.
