Cookies: spice/ginger drop cookies and cut out roll cookies (Joy Of Cooking rich roll cookies with a lemon glaze are my favorites). Each batch would be about 60 cookies; the roll cookie dough can be made ahead and frozen.
Tarts: buy frozen tart shells and fill with jarred mince meat. I'd make 4 dozen if I were combining it with 2 kinds of cookies. Bundt cakes: applesauce/spice is great for the holidays, these could be made ahead and frozen. Are you supplying all the desserts? |

What about fruit crisps, like apple crisp? Everyone loves them, and they are super easy. |

| A couple of large plain cheesecakes from Costco, then set them out with some bowls of "fixings" they can add themselves, i.e. cherries, chocolate sauce, berries, crushed chocolate cookies or ginger snaps, Christmas sprinkles normally used for decorating cookies, etc. |
| i would do a big cake, cupcakes, or two pies. it's very easy if you use a mix or ready made pie shell. |

Icebox Cake This sets up really firm and is easy to transport. I've also added Kahlua or Bailey's to the whipped cream.
Or a huge made-from-scratch banana pudding. Or Chocolate Caramel Tart. I made this with a plain shortbread crust for Thanksgiving and it was unbelievable. Like a homemade Twix bar! |
