I am starting to make & freeze some cookie dough for my Christmas cookies.
I'm having a baby in less than 2 weeks so I plan to make the dough now, shape it into balls, & freeze in ziploc bags, so all I have to do later is pop it on a tray & bake it. I'm already doing chocolate chip & DH's favorite chocolate sugar cookies. I don't think I'll be doing any rolled & cut cookies, like decorated sugar cookies, this year. Any other favorites that I can freeze? |
| If you are making drop cookies you don't need to roll them into balls. I squish the freezer bags flat and then use a knife to cut off the bag and cut the frozen dough chunk into little squares and they go right onto the cookie sheet. Works with choc chip, oatmeal and peanut butter. |
| You can also do cookies that are rolled into logs and then cut before baking. Martha Stewart has a chocolate spice one that is good (from her cookie magazine, I don't have a link, but it has ground pepper, espresso power, and a few other spices in it.) |

Mexican Wedding Balls are very easy and extremely freezable.

Sure. It's really easy - my 6-yr old has made them almost all by himself! 3 squares baker's unsweetened chocolate 1 cup butter 1 cup sugar 1 egg 1 tsp vanilla 2 cups flour 1 tsp baking soda 1/4 tsp salt Additional sugar or colored sugar Microwave chocolate & butter on high 2 min. or until butter is melted. Stir until chocolate is completely melted. Stir in sugar until blended. Stir in egg & vanilla until completely mixed. Combine flour, baking soda & salt & stir into chocolate mixture until completely blended. Refrigerate at least 30 minutes. Heat oven to 375. Shape dough into 1-inch balls, roll in sugar, and place on ungreased cookie sheet. Bake 8-10 minutes or until set. Cool on wire rack. Alternatives: Roll balls of dough in finely chopped nuts instead of sugar, make an indentation in the center of each ball and fill with jam or with caramel (melt a 14-oz pkg of Kraft caramels with 2 tbsp milk to make caramel mixture). Bake as directed. |
