Hi all, I am in trouble... Long story short, I got a 16 pound turkey when I ordered a 5-9 pound one... It was only for DH, DD and myself.. We have had three days of Thanksgiving dinner, and and i have two HUGE tupperware containers full of leftover turkey... It took three boxes of stuffing to stuff the bird, and so I also have a large mixing bowl full of leftover stuffing. I have the carcus cooking with water in the crockpot for broth right now, so I can make a soup tomorrow.. I need more ideas for recipes to use these large quantities of left overs so that I can prevent wasting this large amount of food, and not be feeding my family the same thing every day for the next month... Any help would be soooooo appreciated. TIA!!

Turkey salad instead of chicken salad. I like to add a little curry powder to it.
And my mother made turkey casserole with the leftover meat. Throw in a can of cream of something soup (I like broccoli or mushroom, some like celery), a bag of frozen veggies, and some shredded cheese. |
| There are tons of chicken casseroles on allrecipes.com that call for 2 cups of chopped cooked chicken. Go to the "ingredients" page, type in chicken (or turkey) for the ingredient (and whatever else you like) and put in "casserole" for the key word and I bet a lot of ideas will come up. You can make the casserole now and freeze it, or you can freeze the turkey in 2 cup portions and then pull it out and subsitute it for chicken when you find a recipe you like. |

| I am planning to make sandwiches to freeze. Turkey on one side, stuffing on the other, cran sauce in the middle (so it doesn't get bread soggy). Wrap in wax paper then foil and freeze. Take off foil to microwave or defrost in fridge over night. |
