| Doesn't have to be fancy. Just wondering what you use, and in what amounts. I'm playing around with a basic recipe and it's just not quite right. |
| I use the recipe out of the Betty Crocker cookbook. I imagine it's pretty basic/the same as most others. But I substitute half of the white flour for wheat and add a mashed banana. So good, I don't even use syrup! DS is allergic to nuts but if he weren't, I'd add some chopped walnuts, too. Instead we sometimes add chocolate chips. |

Nigella Lawson's is amazing. You don't have to fry it in the leftover bacon fat/oil, but it does make them taste even more fabulous. My family is southern and that's how we did it growing up. Now I just use Pam seeing as how I really don't want to be as fat as my grandmother was.

| I can't think of the exact proportions right now, but I use white whole wheat flour, yogurt, an egg, skim milk, baking powder, flaxseed meal, walnuts, and blueberries (or sometimes dark chocolate chips). I made up the basic recipe and I tinker with it each time. Light, healthy, and really good. |
