I use it to make broth to baste the turkey and add to the gravy.

I took it out and added it to a pan, then a little water and then I let is simmer while the turkey cooked. After a couple of house I used the water to make a delicious gravy Never mind I did not see that the rest of the giblets were stuffed in a bag ( I swear I looked for this bag and thought they must have forgotten to add it to my turkey!) in the other end of the turkey!!! But the turkey was great (I guess we ingested some plastic fumes?!) and the gravy was amazing!

Oh my gosh, I just about gagged when I pulled it out of my turkey the other day!!! I had never thought once to keep it for my stock, I actually have my carcus cooking in the crockpot right now, never occurred to me to do anything but gag and throw it away when I pulled it out.

Why is OK to eat a turkey leg, breast, and wing, but not the neck???

I eat the neck, heart and gizzards. In my culture those are the best things ever. I will take your unwanted necks next time!
