It's roasted mashed sweet potatoes (already did that), eggs, sugar, melted butter, milk, pumpkin pie seasoning.
Can I assemble this now and bake tomorrow? |

| I am wondering the same thing. I am concerned about it being dry if I cook the potatoes now, fridge over night - then bake again tomorrow. |
| I make a carrot souffle (basically the same ingredients as the sweet potato casserole but using carrots) that I've done both ways...baked the night before and then reheated in the microwave the next day OR assembled the night before and baked on the day of. The one baked on the day of seems to suffer a bit in terms of fluffiness. The one baked the night before is a bit dryer when reheated. Both were eaten up...every last bit. |

OP here.
I went ahead and assembled it, so that ship has sailed! 20:47, I would at least do the potatoes tonight, even if you don't do the rest until tomorrow. I roasted mine yesterday & they took over an hour in the oven. You can microwave them but I like the flavor better when roasted. |

Just wanted to say the SP casserole turned out awesome! I made a topping of chopped pecans, brown sugar, & butter & the whole thing was really yummy!
I hate sweet potatoes with marshmallows or ones that are all syrupy & overly sweet, but this recipe was just right. |
