Green beans almondine.
Steam beans (with ends trimmed) in microwave until tender-crisp (about 5-6 minutes--check halfway through). Toss with 1 TBS butter, salt, and pepper. Sprinkle generously with toasted almond slivers. (Toast almonds in a heavy skillet over medium heat, stirring constantly. Remove from heat just when almonds start to turn brown at the edges. This takes a few minutes. I toast an entire bag at a time and store whatever I don't have in an airtight jar.) |
| Slice up some long onion slices and toss with green beans and olive oil until coated, season with salt and pepper. Roast in 400 degree oven flipping/stirring green beans every 10 minutes so they roast evenly. Roast until golden brown/brown, about 20 minutes. If the beans feel a little too crisp, and taste a little bland, roast for a little longer. They sweeten up and intensify in flavor as the sugars caramelize. |
| Emeril has a great greenbean recipe on the Food Network with bacon and onions. Yum! |
| microwave for 2-3 minutes |
| I also like them roasted with onions like PP, but splash on some balsamic vinegar at the end. |
| Steam fresh beans until tender. In separate pan melt and slightly brown butter. Add chopped parsely. Add beans to this butter mixtures, coat evenly and service. |
| I just roast them with olive oil, salt and pepper. |

Sauteed in olive oil and a little butter with Shallots and garlic. Yummy.
Also, I like to cut the beans really small - like half-inch pieces. It's a little laborious, but for some crazy reason, I think they taste better! |
| Stir fry over very hot heat with a little oil, salt, pepper, and chili flakes. add a little garlic if you like, then at the end, a squeeze of lemon or lime. |
