Green beans almondine.

Steam beans (with ends trimmed) in microwave until tender-crisp (about 5-6 minutes--check halfway through). Toss with 1 TBS butter, salt, and pepper. Sprinkle generously with toasted almond slivers. (Toast almonds in a heavy skillet over medium heat, stirring constantly. Remove from heat just when almonds start to turn brown at the edges. This takes a few minutes. I toast an entire bag at a time and store whatever I don't have in an airtight jar.)

Slice up some long onion slices and toss with green beans and olive oil until coated, season with salt and pepper. Roast in 400 degree oven flipping/stirring green beans every 10 minutes so they roast evenly. Roast until golden brown/brown, about 20 minutes. If the beans feel a little too crisp, and taste a little bland, roast for a little longer. They sweeten up and intensify in flavor as the sugars caramelize.

Sauteed in olive oil and a little butter with Shallots and garlic. Yummy.

Also, I like to cut the beans really small - like half-inch pieces. It's a little laborious, but for some crazy reason, I think they taste better!

Stir fry over very hot heat with a little oil, salt, pepper, and chili flakes. add a little garlic if you like, then at the end, a squeeze of lemon or lime.
