Do you have a pumpkin soup recipe?

I'm going to make pumpkin soup this year as a first course for our Tgiving dinner. Do you have a recipe you love and wouldn't mind sharing? I've made butternut squash soup many times, but never pumpkin. Thanks.

I don't, but I love all recipes.com for this kind of thing. I just checked & they have a ton of pumpkin soup recipes, some of which look really good. I may try the curry one today!

I find all squash soups to pretty much be the same. You peel and cut the squash, can be butternut, pumpkin or acorn. I saute onions in a pot, maybe a little garlic, add the squash, add vegetable broth until the squash is mostly covered and simmer until it is tender. You can go in any number of directions by adding apples or potatoes, sweet potatoes, carrot, etc... and usually it is spiced with curry or something along the nutmeg/cinnamon/cardamom route. Once the squash is cooked, blend it in a blender or use an immersion blender and then flavor to your liking. You can add dairy if you wish, but it's usually unnecessary if you are blending it. I haven't used a recipe for squash soup for years, but it is consistently good and easy to do it this way.

OP here - Thanks, PPs. I've seen lots of recipes on the web, but I don't want to try a dud for Thanksgiving. It seems like pumpkin soup is spiced differently than butternut squash (the soup I made is not sweet at all and is only seasoned with salt and pepper). Any other input is appreciated!

That's what's good about allrecipes. I figure if 300+ people gave something 4.5 stars, it's probably pretty good. I always read the comments too, to see how people adjusted the recipe.
