No. Speeding up digestion is actually a good thing. You are confusing the GI of food with digestion. Fruits and veggies in raw form have a lot of minerals and vitamins. When it is pulverized (by blender or by good chewing) more of it is available to to the body through the food's journey through your gut. Hard to digest foods takes longer to move through your gut (like meat), because they are still getting processed. The faster the food moves through your gut the faster you can poop it out. Since fruit and veggies have more fiber (undigestable bit of food) body removes it like a waste product, and basically the fiber also provides the form (bulk) for other waste products to adhere to it and come out. If your gut is good, you should actually be pooping 2-3 times a day. You should not have to strain hard to poop. You should have well formed bulky poop, and not thin-like-a-pencil poop.

Speeding up digestion just means that more of the nutrition is available for your body for longer. In the fruits and veggies, you are getting the kind of vitamins, minerals, enzymes and other micro-nutrients that your body needs but that other processed foods are not providing. Simple carbs, fat, sugar and salt are not that great. Raw fruits and veggies are good.

Raw fruits and veggies are good, in moderation. People who adopt a purely raw fruit diet misunderstand and think "vitamins, minerals, enzymes and other micro-nutrients that your body needs (etc)" all are best absorbed from raw food.

There are a lot of nutrient that require cooking or other processing of the food to be released.
