Pumpkin treats for kids

Im looking to find a recipe using pumpkin that kids will actually eat! Any suggestions? A recipe that they could actually help make would be even better. Thanks!

Any pumpkin bread recipe will work fine, and my kids love it.

I buy the pumpkin bread mix from Trader Joe's. I make mini muffins, they love it!

My kid LOVES pumpkin pie. So nutritious, too - i simply cut back the amt of sugar a little bit every time i make it. And sometimes I subst. sweet potatoes and he gobbles it up. AND i can make it w/out the crust (skip the processed flour and butter) and it's pumpkin pudding! Yum!

Today I had some leftover canned pumpkin in the fridge that I wanted to use up, so I mixed it with nonfat vanilla Greek yogurt, a little bit of brown sugar, and some pumpkin pie spice. It was really good & tasted like pumpkin pie! I ate it with a spoon but I bet my kids would like it with Graham cracker sticks for dipping.

Pumpkin pancakes. I don't have a recipe to share, but I think the one I've used in the past was from epicurious.com.

OP here thanks for all the ideas. I especially like the idea of doing a pumpkin pie without the crust and added crushed graham crackers. I'm sure the kids will love it!
