Dinner ideas -- easy one put dish plus salad

My parents are coming in tomorrow evening and I've hurt my knee so I can't stand for a long time. My dad offered to get Chinese food but I'd rather offer them a home-cooked meal at least one night.

Can anyone suggest something that's delicious but not too involved that I could serve with a salad tomorrow night?

The crockpot is out because I won't shop until tomorrow.

baked ziti? I'm not sure about the delicious part, but it sure is easy.

Cut up some chicken, brown it, and dump in a simmer sauce -- vodka sauce (serve over spaghetti with a salad), butter chicken (serve with salad), etc.

Tacos. If you have enough corn, black beans, pico and lettuce, you can serve it as a "taco salad" with some tortilla chips. All you really have to do is brown the meat, cut up the tomato and onions for the pico and open some cans.

Broil a nice piece of fish, like salmon (you could buy a marinade or make an easy one like soy sauce, garlic and ginger) - all you do is turn on the oven and 12 minutes later, ta da! Serve with the salad, and if you want you could make brown rice on the side.

Try a chicken/meat in a marinade that you can bake, you can just put everything on a table and sit down while you measure everything out and trim the chicken. Here is an example.

Chicken Adobo
Serves 2
2 boneless chicken breasts
1 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, minced
3 tablespoons white or apple cider vinegar (or combo of the two)
1/4 cup soy sauce
1/2 cup water
3 tablespoons honey
2 bay leafs
1/2 teaspoon paprika
1/4 teaspoon freshly ground black pepper

1. Combine ingredients, marinate chicken if time (overnight, 2-3 hours, whatever)
2. Bake at 325 for 40 minutes.
3. For sauce, bring marinade to boil in a small pot, add 2 teaspoons cornstarch mixed with 1 tablespoon soy sauce to thicken.
