Beef Pho
Tomorrow is toasted coconut rice salad with chicken Wednesday I think we are going to make some deep dish pizza if I have the time to make dough. Then we usually just have a smattering of raw veggies on the side. |

Tonight we had Ramen with added chopped carrots and rotisserie chicken.
DD13 had tomatoes and carrots on the side, I had a small bowl of bagged salad. No idea about tomorrow or rest of the week yet. |
| Naan pizzas (pesto, mozzarella, prosciutto, cherry tomatoes, olives, and parm) served with veggies and hummus on the side. I do a workout class on Monday nights, so this is one I can get on the table within 15ish minutes. |

Taco soup based on an old Trader Joe’s recipe without Trader Joe’s ingredients. Basically:
Black beans Corn Diced onions and peppers Brown rice Salsa Carton of roasted tomato and pepper soup Spices Toppings of choice from avocado, tortilla chips and cheddar cheese. |
