Wednesday I think we are going to make some deep dish pizza if I have the time to make dough.

Then we usually just have a smattering of raw veggies on the side.

Tonight we had Ramen with added chopped carrots and rotisserie chicken.
DD13 had tomatoes and carrots on the side, I had a small bowl of bagged salad.
No idea about tomorrow or rest of the week yet.

Naan pizzas (pesto, mozzarella, prosciutto, cherry tomatoes, olives, and parm) served with veggies and hummus on the side. I do a workout class on Monday nights, so this is one I can get on the table within 15ish minutes.

Random tonight. Kid had a slice of Spanish tortilla, scrambled eggs and veggie bacon. Adults had slice of tortilla and tofu sandwiches. Tried this recipe and really liked it - https://theeburgerdude.com/vegan-deli-meat/

Taco soup based on an old Trader Joe’s recipe without Trader Joe’s ingredients. Basically:
Black beans
Corn
Diced onions and peppers
Brown rice
Salsa
Carton of roasted tomato and pepper soup
Spices

Toppings of choice from avocado, tortilla chips and cheddar cheese.

We had chicken soft tacos for dinner. Tomorrow (technically tonight since it’s almost 1 AM) is ribeyes with mashed potatoes and roasted veggies.
