If you want a mix, trader joes has a pumpkin cake mix right now that you could make with cream cheese frosting.

Someone posted a recipe for Maine Pumpkin Bread awhile back, I made it into a loaf and muffins the other day, it's really good.

if you want something rich...look up the recipe on epicurious for bourbon pumpkin cheesecake-- it's really good! (I skip the sour cream topping). Smitten kitchen also adapted this one.

too late for your weekend potluck...but in the future this is a great pumpkin cake/cupcake recipe. variation on a paula deen recipe but with applesauce for 1/2 the oil. healthier and actually tastier (i did a taste test, and the applesauce version won).

I second the pumpkin whoopie pies. I made the "mini" versions which made about 90 when I doubled the recipe. I snuck in half whole wheat flour and then half white flour for the recipe. No one could tell the difference.
