My favorite is a super simple lentil soup. It’s how my middle eastern MIL makes it.
Sauté diced onions, carrots, celery. Add in a little cumin, salt, pepper and cook until fragrant. Add red lentils and water. Cook until tender, adjust water and salt as needed. Finish with some chopped cilantro and a squeeze of lemon |
NP Progresso had more than one lentil soup. My personal favorite is the Lentil with roasted vegetables. Sometimes I serve it over rice. |

Lazy soup: bag red lentils, cook in water to cover, with a veggie maggi boullion cube. After 20 min or so (lentils are soft), add a little can of el pato chile tomato sauce, a can of coconut milk, garam masala, and baby spinach. Simmer for a few min and voila.
