Homemade soup ideas needed

I would like to start to make more soups as the weather is getting colder. I know how to make chicken and tomato soups from scratch. What are some of the soups you make? I can look up the recipes, but I need ideas! TIA!!!

I LOVE beef barley, vegetable barley, butternut squash, split pea. Those are the ones I make most often (in addition to chicken noodle).

It's easy to make a Butternut Squash soup. I think you just roast the squash (get the kind already cut up from the Supermarket) and then put it in a food processor with some cream and salt and pepper and whatever other spices you want and it's delicious.

You don't roast squash if it's already peeled & chopped - just cook it on the stovetop.

Ditto beef barely suggestion- super easy in crockpot (beef chunks, barley, broth, mushrooms, I also added some sauteed carrot, celery, onion)

epicurious has pinto bean/tomato/squash recipe that is easy/healthy

black bean is easy-- tomato, black beans, corn, green chiles and give it a quick blend w/ an immersion blender to desired creamy/chunky consistency

minestrone- crock or stovetop

tortellini soup- saute some onion/garlic, add a box of chicken broth, bag of baby spinach, cooked tortellini, can of diced tomatoes

I did a ham and split pea in the crock last year, was quite yummy and easy

and one more-- potato/kale (chicken broth base, also w/ sauteed onion/garlic) and then toss in the peeled uncooled potatoes and chopped kale, salt to taste, also can add some italian spices

White bean / white chili with chicken. My son actually loves it. It's pretty much, dump two cans of white beans in a crockpot, some chicken broth, a chopped onion, some cut up chicken, garlic, italian seasoning and probabl some other very important seasonings i am forgetting (cumin maybe?).

I think I sometimes add a can of chopped chili peppers.

Yeah you do. Boiling it on the stovetop doesn't compare to the depth of flavor you get from roasting. And that's how you roast it - you peel and chop it first. You don't stick a whole squash in the oven to roast.

I use the McCormick Chicken Chili seasoning to make mine. I cook chicken breast or boneless chicken thigh meat. I combine the cooked chicken, can of white beans, can of corn, water & seasoning. Bring it boil and simmer for 10-15 min.

It comes out delicious and the kids eat it too. I like the idea of putting it in the crockpot, but it's so easy and quick that I think making it on the stove up might be a way to go.

I know there are different kinds of squash - which one is good for roasting/soups?
