My teens did this with their cousins. Part of the fun was that they worked together and made the sandwiches themselves. They used metal cookie cutters to make the bread cute shapes and remove the crusts. My job was just to drive and pay on the shopping trip but they make the supplies list, did the shopping, sandwich making, and cleanup.
I also asked them to save the crust pieces they cut off and then used them in a bread pudding.
For op's group that's very sweet of you to buy a platter, but I'd probably tell my teen dd to make the sandwiches herself and/or help her set up a make-your-own-sandwich tray.
If buying, I had Panera sandwiches at a conference recently and they weren't bad.
